I thought I would do something a little fun today and really share with you. A yummy recipe!
May has been a bit slow photographically speaking, since I decided not to do seniors this year, it gave me some free time in May. I must say though, it was really needed. I have been spinning in a whirlwind since my business took off, and it has been nice to be able to think and be creative without having to multitask. June kicks of great though, lots of babies on the horizon.
So, onto the good stuff. With all the graduation parties and such going on, there is a big need for goodies, so you can whip this yummy treat up pretty quick, and it is a big hit!
OATMEAL CAKE
1 cup oats - cooked to package directions
1 cup brown sugar
1 cup white sugar
1 stick butter
2 eggs
1 cup flour
1 tbsp baking powder
Mix all ingredients together and pour into a greased pan. Bake at about 350 for 30 min or so.
When toothpick comes out clean from center check, remove cake and let cool. Set oven to broil(you will need it in just a minute)
When cool, take a fork or ice pic and poke holes all along cake.
Then mix 1 can of eagle brand milk and 1 stick butter(melted) and 8 oz coconut.
Pour mixture over top of cake, then place back in oven on broil, or if you are lucky enough to have a broiler, then under the fire. Let the coconut toast and the icing to bubble and slightly burn.
Cut and eat!
